Description
Crafted from the ancient Bittuni grape — an indigenous Israeli variety rediscovered and developed through years of research by Dr. Shivi Drori, Gva’Ot’s chief winemaker — this Reserve is a rare expression of Israel’s viticultural heritage. The vines are trained in the form of a chalice and grown without irrigation, concentrating the fruit naturally in the Judean Hills.
Aged 12 months in French oak barrels, the wine delivers a profile that is red-fruited, light yet complex, with elegant structure and a long, refined finish. True to the Reserve series ethos: only the winery’s finest specialty wines make the cut, oak-aged for extended periods to achieve exceptional depth and character.
