Cidrerie du Vulcain’s Poire (Perry) Comment is a perry made from late-season perry pear varieties (end of October-December) such as Plant de Blanc, Fausset and Cloche, Gaubert, Courcou, and Rouge Vigné.
Pear cider from Domfrontais, Normandy made from late season varieties. 2 years aging in bottle and then disgorged. A little residual sugar.
The pure perry juice is fermented on its own wild yeasts and coarsely filtered on white clay. Ancestral method without disgorging: partial fermentation in stainless steel and resin vats, then aging in bottle. No added sulfites.
