Gérard Boulay’s “terre blanche” vineyards in Chavignol produce some of the most distinctive and soil-inflected Sauvignon Blancs in the Loire Valley — wines with a delineation and minerality. Boulay stands among the appellation’s finest producers, alongside neighbors Cotat and Vatan.
Tasting Notes
Precise and mineral-driven, with the hallmark flinty character of Chavignol’s limestone soils. Expect citrus, white stone fruit, and a long, saline finish with exceptional tension and length.
Food Pairings
The classic match is Crottin de Chavignol goat cheese — a pairing rooted in the same village. Also excellent with fresh oysters, grilled seafood, arugula salad, roasted peppers, and lemon chicken.
